  • 8 cups sourdough bread (one 18-ounce loaf), torn or shredded<\/span><\/li>\n
  • 2 tablespoons butter<\/span><\/li>\n
  • 3 vegetarian apple sage sausages, chopped<\/span><\/li>\n
  • 1 onion, chopped<\/span>\u00a0<\/span><\/li>\n
  • 3 carrots, peeled and chopped<\/span>\u00a0<\/span><\/li>\n
  • 4 stalks celery, chopped<\/span>\u00a0<\/span><\/li>\n
  • 1\/2 cup white wine<\/span>\u00a0<\/span><\/li>\n
  • \u00bd teaspoon sea salt\u00a0<\/span>\u00a0<\/span><\/li>\n
  • Dash of black pepper<\/span>\u00a0<\/span><\/li>\n
  • 2<\/span>–<\/span> 1\/2 cups vegetable broth<\/span>\u00a0<\/span><\/li>\n
  • 2 eggs<\/span>\u00a0<\/span><\/li>\n
  • \u00bc cup Gotham Greens Classic Pesto<\/span>\u00a0<\/span><\/li>\n
  • Gotham Greens Basil and Gotham Greens Classic Pesto, to serve<\/span>\u00a0<\/span><\/li>\n<\/ul>\n

    1. Preheat oven to 375 degrees Fahrenheit.\u00a0<\/span>\u00a0<\/span><\/li>\n
    2. Spread bread pieces on a baking sheet in a single layer and bake for 15-20 minutes until lightly toasted. Set aside.<\/span>\u00a0<\/span><\/li>\n
    3. While the bread is toasting, heat the butter in a deep skillet or enamel Dutch oven. Add the sausage and saut\u00e9 until golden brown, about 5 minutes.\u00a0<\/span>\u00a0<\/span><\/li>\n
    4. Add the onion, carrots, and celery. Cook for 7-9 minutes or until onion is softened and translucent.\u00a0<\/span>\u00a0<\/span><\/li>\n
    5. Stir in white wine, salt and pepper. Cook for a couple of minutes until the wine has evaporated.\u00a0<\/span>\u00a0<\/span><\/li>\n
    6. Pour the bread cubes into the pot with the cooked vegetables and stir to combine. Pour into the baking dish and spread into an even layer.\u00a0<\/span>\u00a0<\/span><\/li>\n
    7. In a medium mixing bowl, combine broth, eggs and pesto. Stir well with a whisk. Pour over the bread and vegetable mixture in the baking dish.<\/span>\u00a0<\/span><\/li>\n
