If you’re looking for a quick weeknight meal that’s colorful, customizable and fun to eat, ssam might become your new favorite recipe. Ssam—the Korean tradition of wrapping bold, savory bites in leafy greens—is all about balance and it can be served family-style so everyone can build their own perfect bite.

This guide to ssam from @dearsaturdays is choose-your-own-adventure cooking at its best.

Start with the essentials

The lettuce: The leaves are naturally sweet, soft, and shaped like little cups — perfect for holding all the ingredients without tearing. Our Butterhead lettuce is tender, crisp and mild enough to let the fillings shine.

The protein: Go classic or keep it plant-based:

  • Chadol bagi (brisket)
  • Samgyupsal (pork belly)
  • Galbi (short ribs)
  • Sliced firm tofu
  • Sauteed king oyster mushrooms.

A little char = big flavor

The toppings: Think texture, crunch and brightness:

Buffalo
It’s not just for Bills fans. This plant-powered take on classic buffalo chicken dip is creamy, spicy, and dangerously scoopable. Pair it with potato chips, celery sticks, or smother it on a wrap (our Butterhead lettuce works great).

Queso

New year, new fresh dressings. Meet the latest additions to our lineup: Avocado Lime Ranch and Italian Herb Vinaigrette.    

Avocado Lime Ranch
Made with avocado oil, this creamy dressing shines with a bright pop of lime for a fresh twist on the classic. If you’re a fan of traditional ranch, this version is a must-try.  

A few ways we are using Avocado Lime Ranch Dressing:  

  • In a Southwestern-style rice bowl  
  • Drizzled on our crispy green leaf lettuce  
  • As an overnight marinade for chicken  
  • In a 7-layer dip for the Big Game    

Italian Herb Vinaigrette
Bright, herbaceous, and perfectly balanced, our Italian Herb Vinaigrette is packed with our own greenhouse-grown basil, rosemary, and parsley and rounded out with roasted garlic and lemon.  

A few ways we’re using Italian Herb Vinaigrette:

Our Green Goddess Salad Kit is already fresh and delicious, but we’re adding shaved brussels sprouts, pomegranate, and parmesan cheese to take it to a next-level holiday side salad. This no-cooking-required recipe comes together in minutes.

Ingredients:  

  • 1 Gotham Greens Green Goddess Salad Kit container 
  • ¼ pound brussels sprouts, thinly sliced (about 1-½ cups thinly sliced brussels sprouts) 
  • Arils from ½ pomegranate, or 1 cup  
  • ¼ cup shaved parmesan cheese 
  • 1 bottle Gotham Greens Green Goddess Dressing  

Directions:  

  1. To slice brussels sprouts, you can slice by hand or shorten your prep time by using the disc blade attachment for your food processor. 
  2. In a large serving bowl, combine the crispy green leaf lettuce (tearing into bite-sized pieces) and toppings from the salad kit. Top with shredded brussels sprouts, pomegranate seeds and parmesan cheese. Drizzle with our Green Goddess Dressing. If you prefer a well-dressed salad, pick up a bottle of our Green Goddess Dressing to enhance the salad kit contents.

Halloween just got more green: Transform your little one into the cutest veggie in the garden with this DIY Baby Butterhead Lettuce costume. 

We’ve teamed up with Primary Clothing to create an adorable costume that’s sure to “leaf” a lasting impression and remind us all how important it is to eat—and wear—our veggies. 

Why Go Green?
Just as getting kids curious about cooking opens a world of delicious experiences, dressing them as their favorite foods can cultivate a lifelong love for all things green. This costume isn’t just about looking cute (though it has that covered). It’s about planting seeds of food curiosity in a fun, creative way. 

A Recipe for Cuteness
Creating this costume is easier than you might think—no green thumb or expert crafting skills required! Here’s what you’ll need: 


Materials 

  • Light green felt 
  • Green pipe cleaners 
  • Hook and Loop Fastener or VELCRO ®
     

Tools 

  • Hot glue gun and hot glue sticks 
  • Scissors
     

Instructions 

1. Create the hood
Use an existing hood from a hoodie to trace the pattern onto green felt.  Cut about ½” from the traced edge. Glue the hood together along the seam line.

2. Create the leaves
Cut wide bibb lettuce leaf shapes from green felt. Glue pipe cleaner veins to each leaf. This will also help to give the leaves structure and shape. Curl the ends of each leaf gently by bending the pipe cleaners.

3. Assemble the costume
Hot glue the leaves layered over each other and connected to each other, starting on the hood, and cascading down the shoulders, back, and chest. Leave an opening in the front, essentially making a hooded cape of leaves. The front leaves should layer over each other a bit when worn. Hot glue a hook and loop fastener just under the front of the hood to hold the costume closed. 

Wearing Green Today, Eating Green Tomorrow
While it might just be a cute Halloween costume now, every positive exposure we offer kids to fresh, healthy food works to make a lifelong impression. Their plant palette will grow the more they see, touch, and munch! Plus, the memories last forever: No one ever forgets the year you dressed up your child as a head of lettuce.

A guide to sneaking in more greens to every bite. 

As the school year approaches, we’re busy gathering new lunch ideas for our little ones. The challenging part? Making sure they are getting enough veggies – and we’re talking without a *full temper tantrum*. We gathered advice from a few experts (Gotham Greens parents) on how to sneak in more greens while keeping meals delicious and enjoyable.

First impressions matter! If you’re meal prepping for a kiddo, you’ll want to maintain a delicious-looking lunch without scaring them away with a sea of green. Our leafy greens, dips and sauces offer yummy ways to incorporate nutrient-dense greens into their favorite snacks, sandwiches, pastas and more. To make mealtime even more exciting, use a cookie cutter to create fun shapes. 

“My 6-year-old refuses to eat his pesto egg bites unless I cut them into airplane shapes.” 

Pesto, pesto, and more pesto. Pesto cooking sauces are one of our favorite ways to sneak in greens because they are incredibly adaptable. 

Does your child go crazy for mac and cheese? Just add a spoonful of pesto, and the veggies will blend right in. Gotham Greens Pesto is made with greenhouse-grown basil and simple ingredients, so you can feel good about adding heaps to any pasta dish, egg bites, or quesadillas. 

 “My 5-year-old loves green pasta. For our 5-minute version, we simply toss pasta with Gotham Greens Classic Pesto. If we have more time, we’ll blend up handfuls of spinach and mix in.” 

Switch up your dips. With a creamy base, plant-based dips are naturally mess-free and pair perfectly with healthy fresh cut veggies like carrots and celery. Gotham Greens Dips are the ideal side dipper since they’re each packed with plants. You can even cook with dips!  

“My child is obsessed with Gotham Greens Spinach Artichoke Dip. We recently followed this recipe for Spinach Artichoke Dip Mac and Cheese and it was a hit!” 

Add a lettuce layer. Whether you’re preparing a turkey sandwich or veggie cream cheese pinwheels, add a leaf or two of our Butterhead lettuce. It adds a delicate crunch and won’t overwhelm the other ingredients.   

“My daughter is picky about lettuce but actually loves Gotham Greens Butterhead – it’s much softer and easier to shred than traditional iceberg.”

“I have raw vegetables prepped for a snack when the kids get home from school and are ravenous. This way we get a few vegetable portions in before they’ve even had dinner. Summer is here and we’re already firing up the grill. These light and bright shrimp lettuce wraps are loaded with grilled corn, cherry tomatoes and topped with our very own Lemon Basil Vinaigrette — making them the perfect combination. 

You’ll Need: 

  • 1 lb uncooked shrimp, cleaned with tail on 
  • 3-4 Tablespoons Gotham Greens Classic Pesto Sauce 
  • 2 ears of corn, husks removed 
  • 1 avocado, chopped 
  • 1/2 pint cherry tomatoes, quartered 
  • 1/4 red onion, chopped 
  • 3-4 Tablespoons Gotham Greens Lemon Basil Vinaigrette 
  • 8-10 Gotham Greens Butterhead Lettuce leaves 
  • Gotham Greens Basil, to garnish 
  • Salt and black pepper, to taste 
  • Wooden skewers

How to Make It: 

  1. Combine shrimp with Gotham Greens Classic Pesto and marinate in a bowl for 30 minutes.  
  2. Soak wooden skewers in water for at least 20 minutes. Thread shrimp onto skewers.  
  3. Pre-heat grill. Spray grates lightly with oil.  
  4. Place shrimp on hot grill and cook until shrimp turns pink, about 3-4 minutes. Flip, and continue cooking until shrimp is opaque and cooked through, about 3-4 minutes. Remove from grill. 
  5. While the grill is still hot, place 2 ears of corn on the grill and cook for about 10 minutes, turning every couple of minutes until charred and the kernels are tender.  
  6. Cut the corn off the cob and add to a large bowl with the avocado, cherry tomatoes, red onion, Gotham Greens Lemon Basil Vinaigrette, salt and pepper. Toss to coat.  
  7. Assemble lettuce wraps by spooning corn salad on a Gotham Greens Butterhead lettuce leaf and topping with the grilled shrimp. Drizzle with additional Lemon Basil Vinaigrette and garnish with fresh Gotham Greens Basil to serve.

You may know we’re an indoor farming and fresh food brand, but did you know that our passion for safeguarding our natural resources informs every decision we make?

At Gotham Greens, we strive to do more with less. It’s all rooted in our love for the planet and our belief that we can farm more thoughtfully. Let’s dive into four ways we are growing greens, in greener ways.

We grow our greens using less water. 

We believe in being good stewards of water – one of our most precious resources. We’re proud to grow our greens using up to 90% less water than traditional, open-field farms. This is equivalent to saving over 450 million gallons of water annually – that’s equal to more than 680 Olympic-sized swimming pools! 70% of global freshwater withdrawals are used for agriculture, which takes a massive toll on Earth’s natural resources. Using water thoughtfully means caring for and protecting our local water systems, and in turn providing more clean water for those who need it. 

And the water we do use? We recycle.

Our greenhouses use hydroponic growing methods without soil, and the water we use is constantly being filtered and recycled back to feed the plants. Food systems are the largest consumer of land and fresh water on the planet, and the leading cause of global water pollution. We designed our farms to keep water recirculating indoors — and out of local rivers, streams and lakes. 

We grow using less land.

Did you know that half of the world’s habitable (ice- and desert-free) land is used for agriculture? It’s true — and contributes to pollution of groundwater and land. We use advanced greenhouse technology and automation to grow much more, with much less space. At Gotham Greens, we use up to 97% less land than traditional farming. That’s around 30 times more lettuce per acre of land!  

And the land we do use? It’s closer to you. 

To reduce emissions related to food production, we must move production closer to consumers, increase yields, decrease food waste, improve farming practices, and shift to a plant-rich diet. We believe that greenhouse farming technology is a solution that addresses many of the issues caused by traditional agriculture. We also build our greenhouses closer to you — meaning our products don’t have to travel as far. Less miles traveled means keeping less trucks on the road, and less transportation pollution. 

So, what does this mean for you? When you buy a package of lettuce at your local store, you’re not just eating more greens. You’re supporting our vision for a more sustainable future.
